Monascus Red is extracted from red yeast rice or processed by extraction from other crops which is fermented with monascus ruber liquid . Monascus Red is actually a mixture of pigments,mainly containing red pigment and yellow pigment,which are polyketone compounds. Monascus red is soluble in neutral or alkaline water. It has weak solubility in acidic water with PH lower than 4. It has good stability to heat, but it is weak when exposed to sunlight.
Monascus red is made from red yeast rice as raw material, through extraction, filtration, refining, concentration, blending and filling.
