Licorice extract is extracted with water from the dried roots and stems of Glycyrrhiza Linn., G.uralensis Fisch., G.inflateBat. and G.glabraL. The residue after licorice extract (licorice extract) is extracted with lukewarm methanol, ethanol, acetone or hexane. Its functional ingredients are licorice flavonoids, licorice flavonol A, licorice flavonol A, licorice coumarone, licorice isoflavone A, licorice isoflavone B, licorice isoflavanone, licorice chalcone A, and licorice chalcone B. It has various effects such as anti-inflammatory, antibacterial, antiviral, anti-tumor and promoting immunity. Licorice extract is an ideal antioxidant and preservative in the food industry. It can also be used as a food additive, seasoning, sweetener, tobacco, cigars, chocolate, beer, vanilla, and liqueur. The base material for the preparation of other flavors.

Basic properties: Licorice extract is brown or tan powder, basically odorless, with a slight licorice smell. It is light-resistant, oxygen-resistant and heat-resistant, and has a synergistic effect when used in combination with vitamin E and vitamin C. It can prevent the fading of carotene and inhibit the oxidation of tyrosine and polyphenols. It is insoluble in water and glycerin, but soluble in ethanol, acetone, and chloroform. Pharmacological activity
1. Antioxidant characteristics and mechanism
Licorice extract has significant antioxidant effects. Research has found that the ethanol extract of licorice has a good scavenging effect on DPPH·, OH·, and superoxide anion free radicals. The main component of licorice water extract is glycyrrhizic acid, which can scavenge superoxide anion free radicals and hydroxyl free radicals, inhibit lipid peroxidation, and has anti-aging effects. He Jianrong and others found that glycyrrhetinic acid has a strong scavenging effect on both OH· and superoxide anion free radicals, and the scavenging ability is significantly related to the concentration.

2. Effect on the respiratory system
Licorice and its extracts have antitussive, expectorant, antiasthmatic, lung protective and anti-respiratory pathogen effects. Glycyrrhizic acid, glycyrrhetinic acid and licorice flavonoids are the active ingredients of licorice's pharmacological effects on the respiratory system.

3. Effect on the immune system
Licorice and its active ingredients can improve the phagocytic function of phagocytes, regulate the number and function of lymphocytes, inhibit the formation of IgE antibodies, anti-inflammatory mediators and pro-inflammatory cytokines, and have anti-inflammatory and anti-allergic pharmacological activities. 6. Mineralocorticoid-like effects
Licorice extract, glycyrrhizin and glycyrrhetinic acid all promote sodium and water retention in humans and animals. It has a good effect on mild Addison's disease, but even high doses are ineffective on severe Addison's disease that does not secrete corticosteroids. Therefore, corticosteroid-like effects of licorice can occur only in the presence of aldosterone and hydrocortisone. Low-dose glycyrrhizin can cause thymus atrophy and adrenal gland weight increase in rats, producing cortisone-like effects of glucocorticoids. At high doses, the hormone-like effect is not obvious and only the mineralocorticoid-like effect is present.

7. Detoxification
Licorice extract and glycyrrhizin have certain detoxification capabilities against some drug poisoning, food poisoning, and metabolite poisoning in the body. Glycyrrhizin is an active ingredient in detoxification. The detoxification mechanism is that glycyrrhizin has a certain adsorption effect on poisons. Its hydrolyzate product glucuronic acid can combine with poisons. At the same time, glycyrrhizin has an adrenocortical hormone-like effect and enhances the function of the liver. Detoxification ability is the result of comprehensive factors from all aspects. Experimental results on mice found that licorice extract and glycyrrhizin have a significant detoxifying effect on strychnine, urethane, cocaine, benzene arsenic, mercury chloride and other toxicities; glycyrrhizin not only has certain effects on pufferfish venom and snake venom. It has detoxification effect and can also relieve the lethal effects of diphtheria toxin and tetanus toxin.
